Local independent ice cream shop in Roseville opens for the season

The long winter wait is over. Sprinkles is open for the season.

The independent ice cream shop, which opened in June 2025 in the former Lexington Plaza DQ building, is back with new menu placards in the front windows. These replace the digital screens and paper menus from last year.

The menu items themselves are much the same, with some updates including "Sprinklers"—a 10% butterfat vanilla soft serve blended with your choice of mix-ins. Shakes and malts; cups, cones, and waffle bowls; and shaved ice and other cold beverages are all available as well.

Sprinkles is co-owned by Timothy Hughes and Curtis Thompson, who also own Maverick's just up the block. Hughes and Thompson are childhood friends who grew up in Roseville.

Fun fact, the pair also grew up with Michael Foehse, one of the owners of Ville City Pizza at the Roseville VFW.

Sprinkles is currently open weekdays from 4:00 p.m. to 9:00 p.m and weekends from 11:00 a.m. to 9:00 p.m. It's located at 1720 Lexington Ave N, Roseville.
